Short version: you do not owe colleges an update for every change, but do not keep presenting yourself as still on the team.

The activity list describes what was true when you submitted. If you quit after that, nothing on your submitted application becomes false retroactively, and most schools do not ask for activity updates. Where it matters:

1. If you are being recruited or soccer is a central part of your application, tell the coach and the admissions office. Recruiting depends on it.
2. If you write a letter of continued interest, an update, or interview later, describe things as they are now.
3. Any application you have not submitted yet should list the real end date.

Burnout is a real reason. Quitting to protect your grades and health is a fine decision, and colleges care far more about your senior year transcript than about a final season.
